Cascara, a superfruit for the benefit of a circular and ethical economy.

Many large organic coffee producers claim to be environmentally friendly but are they really benefiting from a circular economy?

Coffee comes from a cherry, the pit of which is used. The pulp of the fruit, which is called cascara, is simply thrown away. This generates tons of waste every year when it is possible to use this pulp to make delicious drinks rich in antioxidants and good for the health.

What is cascara?

The term cascara can be translated from Spanish as coffee cherry pulp, which is the pulp that is extracted from the coffee berry.

In order to make coffee, the coffee berries or cherries are harvested. The core of these berries is used and extracted by drying. Different drying methods can be used depending on the producer. The dried coffee beans are then roasted and made into coffee. The pulp of the coffee berry is unfortunately not used, it is often shamefully thrown away.

However, some small organic producers use it as natural compost, but this is highly regrettable, as it has many virtues for the consumer. 

At The Cascara Society, we use this cascara to produce a drink that is healthy and, above all, environmentally friendly, as the production process does not require much energy.

We are upcycling!

Using coffee berry pulp or cascara as compost is called recycling. It is simply collecting a waste product so that it is not thrown away, but it does not gain any value.

By recovering cascara to make refreshing drinks with multiple virtues, we are upcycling. This means that we give a higher value to the "waste" by transforming it. This allows us to satisfy consumers by offering them a natural, healthy and high quality product, but also to support organic coffee producers. Indeed, it is important to know that processing waste has a price, especially if they want to compost it.

The circular production process of our cascara drinks

As we have explained, we support the small organic coffee producers, they can quietly produce their coffee, while we take care of collecting the cascara. We take care that the cascara is from sustainable organic agriculture, no pesticides or fertilizers are used, everything is organic.

Once the cascara has been collected, it is dried. We do not use any energy for this, as we put it directly in the sun and in the open air to dry.

We make sure that the brewing time and temperature are optimal to obtain the full flavour of the cascara. For our flavoured drinks, such as cola, we use natural and organic flavours. We do not use sweeteners to sweeten our drinks, we add organic grape concentrate.

For the bottling stage, we chose glass bottles because they are reusable and do not generate waste, unlike plastic packaging.

Why consume our cascara drinks?

Now that we have told you about the production process of our cascara drinks, let's talk about the advantages of these drinks. It is important to know that all these advantages are directly linked to the choice of the manufacturing process.

1. Because they are 100% natural

No chemicals are used in the production of cascara, which is organically grown and sustainable. The manufacturing cycle uses only natural processes that preserve all the benefits of cascara. Also, we do not use chemical sweeteners to sweeten our products.

2. Because they promote a circular economy

Our start-up strongly supports the sustainable and circular economy by working with small organic producers. We recover the cascara waste they don't need in order to make our drinks.

As you have seen during the manufacturing process, we do not waste any resources and we do not use much energy. Also, we are not responsible for any pollution, as no pesticides are used and we do not use plastic packaging.

3. Because cascara has many benefits

As well as tasting good and being refreshing, our drinks are very good for your health and your mood. First of all, cascara will give you a boost for your day, as it contains caffeine. Secondly, it is a drink that is very rich in antioxidants and several vitamins and minerals that strengthen your immune system.
