More than just a residue
What is the cascara ?
"Cascara is the Spanish word for coffee cherry pulp. It can also be found under the name of coffee berry.
We may forget that coffee beans are actually the pits of the coffee cherry which, once extracted, are dried and then roasted to the delight of caffeine lovers. The pulp, on the other hand, is essentially only used as natural compost. This is a great pity, given its virtues and advantages, both for small producers and for consumers.
